From Our Table to YOURS: Mom Meals: Quick Meals for Busy Moms & Kids

I have a degree in Education and a minor in Psychology from the University of Tennessee. In addition, I have ten years of experience in marketing and sales. As a single, busy mom with several jobs and two active kids, there is not much time to spend in the kitchen. I also don’t enjoy spending too much time driving through restaurants before and after sports either. So, I decided to reach out to my friend Michelle Wilson, @sipstosugars, to help me create simple and quick recipes to take on the go. We made two meals in under forty-five minutes, and that included us talking too much! We made personal pizzas and Michelle’s mac and cheese. You will want to save this mac and cheese. It should be served in Williamson County’s best restaurants — it’s that good!

Michelle’s Mac & Cheese

INGREDIENTS

  • 1 box pasta
  • 4 cups chicken broth 
  • 1/2 cup salted butter 
  • 1 1/2 cups shredded White cheddar cheese 
  • 8 oz. cream cheese 
  • 1/2 cup sour cream 
  • 3 cups milk 
  • 3 tsp. Dijon mustard 
  • 3 tsp. hot sauce 
  • 2 tsp. Kinder’s Master Salt 
DIRECTIONS
  1. Add the macaroni and broth to the Instant Pot. Stir well. 
  2. Put the lid on the pot, seal and hit pressure cook, high pressure and set for six minutes. 
  3. Quick-release and open lid when finished. When the lid comes off, there will be a lot of liquid in the pot, but this is exactly what we want, as it will serve as the base for the sauce! 
  4. Add the butter, white cheddar cheese, cream cheese, sour cream, milk, Dijon mustard, Kinder’s Master Salt and hot sauce. Stir until it gets creamy. 
  5. Note: We take this in the car in to-go containers with plastic spoons.  

Personal Pizzas

INGREDIENTS

  • Stonefire Naan round flatbreads
  • 3 Tbsp. Pizza sauce, add more or less to your liking
  • 2-3 cups shredded cheese of your choice
  • Toppings of your choice
DIRECTIONS
  1. Spread pizza sauce on naan round flatbread
  2. Add toppings of your choice 
  3. Sprinkle shredded cheese over toppings. Michelle, @sipstosugars taught me this trick to seal in the toppings (no more mess!)
  4. Place naan pizza in an air fryer for five minutes at 390°F or until cheese is bubbly and the naan bread is crisp
  5. Parent Hack: I put our pizzas on a paper plate and then place them in a gallon-sized Ziplock bag — then just hop in the car and go!
